  • 2 teaspoons olive oil
  • 1 small onion, diced
  • 1 clove garlic, minced
  • 1 green bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1 green onion, sliced
  • 6 eggs
  • 2 teaspoons milk
  • 2 teaspoons fresh dill, chopped
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ cup Parmigiano-Reggiano cheese
  • 2oz feta cheese

Preheat the oven to 375F and grease 3 small baking dishes. Heat the oil in a skillet and then add garlic, onions and peppers. Cook for 4 minutes, or until the onions are translucent. Remove from skillet and spread out in the dishes. In a large bowl, whisk together the eggs, feta cheese, parmesan, milk, dill, salt and pepper. Once well combine, pour the egg mix over the vegetables in the dishes. Bake for 30 minutes, or until cooked through. Let sit 5 minutes before serving.
