Imagine all sorts of delicious vegetables add with an egg! Well your imagination has come true. This scrambled egg is made with fresh tomatoes, spinach, mushrooms, onions and peppers and is made as a scrambled egg.

  • 1/4 cup of olive oil
  • 1/4 cup of sliced fresh mushrooms
  • 1/4 cup of chopped onions
  • 1/4 cup of chopped red bell peppers
  • ¼ cup of spinach
  • 3 eggs
  • 1/4 cup of fat free milk
  • 1/4 cup of chopped fresh tomatoes
  • 1/4 cup of shredded Cheddar cheese

First, heat olive oil in a skillet or frying pan over medium-high heat. Then add mushrooms, spinach, onions and peppers and sauté them until the onions are transparent.
In a mixing bowl, beat together the eggs and milk. Then add the egg mixture to the vegetables and stir in the tomatoes. Cook everything until the eggs are set. When the eggs are almost done, mix in the cheese, and serve immediately.
