  • 3 T. unsalted butter
  • 1 large onion, chopped
  • 1 T. all-purpose flour
  • 2 medium red potatoes, peeled and diced
  • 4 C. low-sodium chicken broth
  • 1 16-oz. bag frozen peas, defrosted and drained
  • 1/2 C. heavy cream
  • 3 T. chopped parsley
  • 2 T. chopped dill
  • 8 oz. ham steak, thinly sliced
  • salt and pepper

In a large pot, melt butter. Add in onions and sauté for eight minutes. Add flour and stir frequently for three minutes. Add chicken broth and potatoes. Bring to a simmer and cook for 10 minutes. Add peas and simmer for an addition two minutes. Place soup in a blender and puree until smooth. Return soup to pot and add cream, parsley, and dill. Ladle into bowls, season with salt and pepper, and garnish with ham steak slices.
