  • ½ onion, diced
  • 1 carrots, peeled, and diced
  • 1 (14 oz.) can chicken broth
  • Salt and pepper to taste
  • ½ lb. cooked lobster meat
  • 1 ½ C. half-and-half
  • ½ C. white wine

In a large saucepan, sauté onion and carrots until softened. Pour in chicken broth, season with salt and pepper, bring to a boil, reduce heat, and simmer for 10 minutes. Stir in lobster and use an immersion blender to blend until smooth. Add in half-and-half and wine, stirring occasionally, until soup thickens.
