  • 16 Ounces of Soft Mascarpone Cheese
  • 1 Store-bought Pizza Dough
  • 2 Cups of Mixed Berries (raspberries, blueberries, cherries, etc.)
  • 2 Tablespoons of Honey
  • 1 Tablespoon of Lemon Juice
  • 2 Tablespoons of Melted Unsalted Butter
  • 1 Pinch of Mint Leaves

While the oven is preheating to 425 degrees Farenheit, roll out your dough so that it’s about half an inch thick and coat it in butter. Fold up the edges to create a thicker crust along the perimeter of your pizza. Bake it until it’s golden brown and crispy on a pizza stone or baking sheet lined with parchment paper on the bottom rack of your oven -- roughly 6-7 minutes.

As the crust cools, combine the mascarpone cheese, lemon juice, and honey in a large mixing bowl. Spread this mixture over the crust that’s inside the folded edges and cover it with berries of your choice. Sprinkle mint leaves over the top and enjoy!
