Very Cherry Chocolate Chip Parfait

- 2 C. fresh or frozen cherries, pitted
- ½ tsp. orange extract
- ½ C. cold water
- 2 Tbs. corn starch
- 1 C. mini semisweet chocolate chips
- 4 C. plain, vanilla or cherry yogurt
In a small saucepan, heat sugar and cornstarch on low heat. Stir in water until consistency is smooth. Add cherries and fold in. Raise heat to medium and bring to a boil. Remove from stove and refrigerate.
Place four bowls or jars on a counter. Evenly divide mini chocolate chips into the bottom of each one. Then, place 2 Tbs. of cherry mixture on top. Evenly divide yogurt (~1 C./each) into each bowl or jar. Place the remaining cherry mixture on top of yogurt and serve.
