Vidalia Onion Casserole

This is a tasty side dish for most any meal. Goes well with beef or pork. A good replacement for potatoes!

Ingredients

  • 2 large Vidalia onions
  • 1 pkg. club crackers
  • 4 eggs, or 1 C. Egg Beaters
  • 1 stick butter or margarine
  • 1 1/2 C. skim milk
  • 2 C. cheddar cheese, grated
  • 1/2 tsp. paprika
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Directions

Spray a 9x13-inch baking dish with cooking spray. Crumble pack of crackers, and spread out in bottom of dish. Melt 1/2 of butter and pour over crushed crackers. Dice onions into small pieces, and saute in melted butter. Spread onions over crackers. Beat eggs and milk. Pour egg mixture over crackers and onions. Top with cheese and paprika. Bake in oven at 350 degrees 35-45 minutes.
