Sneak in some vegetables for those PBJ lovers

  • 1 small onion, chopped
  • 2 ribs celery, chopped
  • 4 Tbs. butter
  • 2 Tbs. flour
  • 1 C. crunchy peanut butter
  • 4 C. of chicken broth of beef bouillon
  • ½ tsp. celery salt
  • 1 Tbs. lemon juice
  • 4 Tbs. coarsely chopped peanuts

Sauté the onion and celery in the butter until lime and but not brown. Sprinkle with the flour and stir. Add the peanut butter, stir to blend and add the chicken broth or beef bouillon, celery salt, salt and lemon juice. Heat thoroughly. Sprinkle the chopped peanuts on top of each bowl before serving.

Serve 4 to 8
