  • 2 ½ cups cherries
  • 3 tablespoons honey
  • 4 tablespoons butter
  • 2 eggs, separated
  • 2 cups milk
  • 1 teaspoon vanilla
  • 2 cups flour
  • 3 tablespoons sugar
  • 4 teaspoons baking powder

Halve and pit 2 cups of the cherries. Place the cherries in a bowl and add the honey. Stir the bowl and let stand for 30 minutes. Melt the butter and mix it with the milk, egg yolks, and vanilla. Whisk until the mixture is completely combined. Sift together the flour, baking powder, salt, and sugar in a separate bowl and then add it to the milk mixture. Whisk until combined. Whip the egg whites in yet another bowl and when soft peaks form gently fold the egg whites into the batter with a whisk. Spoon the batter into the waffle iron and cook for about 4 minutes. Repeat until all the batter is used. Drizzle the cherry honey syrup over the waffles and garnish with additional cherries.
