Wagon Wheels with Haddock and Garlic

This recipe is very tasty - my wife came up with it.

  • 1 16 oz. box wagon wheels pasta or pasta of your choice
  • 10 cloves garlic, peeled and sliced
  • Salt and pepper to taste
  • 1 handful parmesan cheese
  • 1 generous pinch parsley
  • 2 pieces haddock cut into bite size pieces
  • 1/4 C. olive oil
  • 1/4 tsp. garlic powder

Cook pasta according to box directions. Meanwhile in a frying pan place some oil. Add galic and parsley and cook until garlic releases its aroma. Add haddock, salt and pepper and garlic powder and cook until fish is done. Drain pasta and put back into same pot. Add fish mixture to pasta and toss. Add cheese and parsley and toss again. Add oil and toss one more time, then reheat if pasta is too cold. More oil can be added to your taste. Serve while still hot.
