  • 3 bananas, mashed
  • 1-1/3 cups flour
  • ½ cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • pinch of salt
  • 1 tablespoon oil
  • 1/3 cup plain Greek yogurt
  • 2 teaspoon vanilla extract
  • 1/2 cup walnuts, chopped + extra for topping

Preheat the oven to 350F and grease a loaf baking pan. Combine all the dry ingredients in a bowl and set aside. Combine the bananas, oil, yogurt and vanilla extract in a medium bowl and mix well. Stir the banana mix into the dry mixture and fold in the crushed walnuts. Mix well and pour into the baking pan. Top with whole walnuts. Bake for 40-50 minutes, or until the center is golden and the cake is set. Remove from pan and let cook before cutting.
