Walnut-Coated Honey Mustard Salmon

Walnuts and breadcrumbs create a deliciously crunchy coating for the fish.

Ingredients

  • 1/4 C. Dijon mustard
  • 1/4 C. honey
  • 2 Tbs. Benecol spread, melted
  • 1/4 C. bread crumbs
  • 1/4 C. walnuts, chopped fine
  • 4, (4-oz.) salmon fillets

Directions

Set oven to 400. In a small bowl, add mustard, honey and melted Benecol and mix. In another small bowl, add bread crumbs and chopped walnuts. Place the salmon in a baking dish and sprinkle the fillets with salt and pepper. Heavily brush the salmon with the honey-mustard mixture and then pat the bread crumb mixture on the salmon. Pour any excess honey-mustard mixture into the bottom of the baking dish to help add liquid during the baking process. Bake the fillets for 10 minutes per in. of thickness or until the fish flakes easily.

  • This can also be made with bottled Honey Mustard and 1/4 C. Ground Pecans mixed with the bread crumbs. I'm not crazy about salmon but it's good for you and I do like it prepared like this. Aldi's has 4 salmon filets shrink wrapped and frozen and I have always found them to be good and inexpensive.
