  • 2 teaspoons of olive oil
  • 1 yellow onion, diced
  • 2 cloves of garlic, minced
  • 1 tablespoon of dried basil
  • 2 tablespoons of tomato paste
  • 4 cups of chicken broth
  • 2 cans petite diced tomatoes, with juiced
  • 1 ½ lb. of chicken thighs, skinless and boneless
  • ½ teaspoon of salt
  • ½ teaspoons of pepper
  • 4 cups of dry cheese tortellini
  • 3 cups of spinach
  • ½ cup of Parmesan cheese
  • 1 cup of heavy whipping cream

First, turn the instant pot to the sauté setting on high. Drizzle a good amount of oil to the bottom of the pot. Place the diced onions and give a good stir for a couple of minutes. Then, add the garlic and mix together with the onions until they are soft and translucent.
Incorporate the basil, tomato paste, chicken broth, tomatoes, chicken, salt and pepper to the softened garlic and onions. Blend it all together. Cover the pot and secure the lid. Be sure the controller is set to “sealing”. Set the pot to the manual stew button and set the time to 15 minutes on high pressure. When the time is up, release the pressure by carefully moving the valve to “venting”.
Take out the chicken and place it on a cutting board. Cut the chicken into bite-size pieces and place it back to the pot. Add in the tortellini, spinach, Parmesan cheese, and heavy whipping cream.
Turn the setting back to sauté to cook the tortellini faster. Once the tortellini is heated and tender, serve the soup to a bowl.
