This simple salad has only two main ingredients and yet it is full of flavor! Seasoned with garlic and lemon juice, the asparagus and shrimp salad is to die for.

  • 1 pound asparagus, stems removed
  • ½ pound salad shrimp
  • ¼ cup olive oil
  • 1 ½ teaspoon minced garlic clove
  • 1 tablespoon lemon juice
  • 1 tablespoon minced parsley

Boil a pot of water and add salt. Add the asparagus and boil for 3 minutes. Remove the veggies with a slotted spoon and place them in a bowl of ice water. Add the shrimp to the boiling water and cook for 3 minutes. Remove the shrimp from the heat and transfer them to a large bowl. Slice the asparagus into smaller pieces and toss the asparagus with the shrimp, garlic, olive oil, lemon juice, and parsley. Season with salt and pepper and serve.
