Warm Asparagus Salad

Bacon, onion and tomato make this easy side dish a real treat. A perfect accompaniment to any meal that is lacking a green vegetable.

  • 2 C. asparagus pieces
  • 4 slices bacon
  • 1 small red onion, thinly sliced into rings and separated
  • 2 Tbs. vinegar
  • 1 Tbs. sugar
  • 1/2 tsp. chopped fresh parsley
  • Salt to taste
  • 1 medium tomato, chopped 1 quart torn mixed greens

Cook the asparagus until crisp-tender. Drain. In a skillet, cook bacon until crisp. Remove to paper towel. In drippings, sauté onion until soft; stir in vinegar, sugar, parsley and salt. Stir in asparagus, crumbled bacon and tomato. Pour mixture over mixed greens and toss. Serve immediately.
