Warm Asparagus Salad
Ingredients
- 2 C. asparagus pieces
- 4 slices bacon
- 1 small red onion, thinly sliced into rings and separated
- 2 Tbs. vinegar
- 1 Tbs. sugar
- 1/2 tsp. chopped fresh parsley
- Salt to taste
- 1 medium tomato, chopped 1 quart torn mixed greens
Directions
Cook the asparagus until crisp-tender. Drain. In a skillet, cook bacon until crisp. Remove to paper towel. In drippings, sauté onion until soft; stir in vinegar, sugar, parsley and salt. Stir in asparagus, crumbled bacon and tomato. Pour mixture over mixed greens and toss. Serve immediately.
