Ingredients

  • 1/4 cup of melted butter
  • 1/4 cup of flour
  • 2 cups of milk
  • 2 cups of chicken stock
  • 1 1/2 cups of coarsely chopped broccoli florets
  • 2 1/2 cups of shredded sharp Cheddar cheese
  • 1/3 cup of spinach
  • salt and ground black pepper to taste

Directions

First, whisk the 1/4 cup of melted butter and flour together in a large saucepan over medium-low heat. Make sure to cook the flour until it loses the granular texture. If needed you can add 1 to 2 tablespoons of milk to keep the flour from burning.
Then, slowly pour the milk into the flour mixture while whisking constantly. Stir the chicken stock into the milk mixture. Bring the milk mixture to a simmer and make sure to cook thoroughly until flour taste is gone and mixture develops a thick consistency. Then add the spinach and broccoli and simmer the mixture until the broccoli becomes tender.
Finally, stir the cheese into the vegetable mixture until and cook until the cheese melts. Season it with salt and pepper to taste.
Let the soup cool until it is easy to handle and then serve!
