Ingredients

  • 3 ½ lb. raw carrots, diced
  • 4 tsp. garlic, minced
  • 2 tsp. ginger, minced
  • 5 C. vegetable broth
  • 1 ½ C. heavy cream
  • 1 tsp. fresh cilantro, minced
  • 1 tsp.allspice
  • 1 tsp. salt
  • 1 tsp. Pepper
  • Olive oil

Directions

Drizzle the carrots with olive oil and sprinkle them with salt and pepper. Roast them on 425 for 45 minutes. Once they’re cool, put them in a food processor along with the garlic, ginger, and 3 cups of the broth. Mix until smooth. Put the puree into a large pot and add the rest of the broth and the spices. Once the soup starts boiling, add the cream and turn the heat down on the stove. Let this continue to simmer for about 15 minutes.
