Tomato soup can be made in a variety of way. It usually doesn’t contain ham and cheese, but it’s the perfect addition to this classic meal. The basil, parmesan, and mozzarella gives this soup an Italian flare that’s to die for.

  • 2 (28 oz.) cans of San Marzano tomatoes
  • 2 C. progresso chicken stock
  • ¼ C. fresh basil, chopped
  • ⅓ C. heavy cream
  • 4 Tbs. butter
  • 4 tsp. garlic, minced
  • ½ C. Parmesan, grated
  • ½ C. mozzarella, shredded
  • 8 oz. deli ham, very thinly sliced
  • 2 eggs, boiled
  • Salt and pepper

In a large pot, melt the butter and add in the garlic. Pour in the tomatoes after a couple of minutes and simmer for another five minutes. Pour in the chicken stock and simmer for another 5 minutes. Puree the soup with an immersion blender (or an actual blender). Pour it back into the pot and add in the basil, heavy cream, and cheeses. Simmer the soup for 15 minutes. Add in the salt and pepper, ham, and eggs for garnish.
