Ingredients

  • 1 sheet puff pastry
  • 8 oz. chicken breast, diced
  • ¾ C. reduced fat cheddar
  • 2 C. broccoli, destemmed
  • 1 egg, beaten (+ a dash of water)
  • Salt and pepper
  • 2 Tbs. olive oil
  • 1 yellow onion, diced

Directions

Preheat the oven to 350 degrees. Heat a large skillet to medium-high with the olive oil. Saute the onion for about 5 minutes until they start to get tender. Add the diced chicken and broccoli and cook it for 10 minutes, until the chicken is mostly cooked through, but not fully. Season the contents with salt and pepper. Stir in the cheese. Split the puff pastry in half and pour the contents on half of the pastry sheet. Place the other sheet over it and fork the edges closed. Brush the egg wash on top of the pastry and bake for 25 minutes, until the top is golden brown and flaky.
