  • 2 Tbs. butter
  • 1 Spanish onion, chopped
  • 1 stalk of celery, chopped
  • 1 tsp. garlic, minced
  • 1 russet potato, chopped
  • 5 C. chicken stock
  • 1 C. water
  • 4 C. broccoli florets
  • ⅓ cup half-and-half
  • black pepper to taste
  • shredded cheddar cheese (optional)

Melt the butter in a large pot. Saute the onion, celery, and garlic until they’re tender. Add in the potatoes and cook for an additional two minutes. Pour the chicken stock in and bring it to a boil. Add the broccoli and continue to simmer until the broccoli is tender. Puree the soup with an immersion blender and add in the cheese. Pour in the cream. Cook on high for another 2-3 minutes and add in some pepper.
