Warm Goat Cheese Rounds with Salad

This delicious appetizer will really impress your guests. It looks like it's straight out of a restaurant!

Ingredients

  • 1 package goat cheese medallions or one 8-oz. goat cheese log, sliced
  • 1 egg white, beaten
  • 1/2 C. breadcrumbs
  • 2 Tbs. olive oil
  • one 5-oz. bag baby greens
  • 1/3 C. fruit vinaigrette (your choice of flavor)

Directions

Make sure goat cheese rounds are cold, then dip each one in egg white and coat with breadcrumbs.  Heat olive oil in a pan over medium heat.  Fry rounds for 1 minutes on each side or until browned.  Remove from heat before cheese starts to melt. 


Pour vinaigrette over salad and toss until coated.  Place cheese on salad and serve.
