Warm Goat Cheese Rounds with Salad
Ingredients
- 1 package goat cheese medallions or one 8-oz. goat cheese log, sliced
- 1 egg white, beaten
- 1/2 C. breadcrumbs
- 2 Tbs. olive oil
- one 5-oz. bag baby greens
- 1/3 C. fruit vinaigrette (your choice of flavor)
Directions
Make sure goat cheese rounds are cold, then dip each one in egg white and coat with breadcrumbs. Heat olive oil in a pan over medium heat. Fry rounds for 1 minutes on each side or until browned. Remove from heat before cheese starts to melt.
Pour vinaigrette over salad and toss until coated. Place cheese on salad and serve.
