  • 8 C. chicken broth
  • 1 C. shell pasta
  • 2 Tbs. fresh Basil, chopped (+ basil for garnish)
  • 1 (28 oz.) can of tomatoes
  • 1 (15 oz.) can garbanzo beans
  • 2 Tbs. olive oil
  • ½ C. carrot, diced
  • 4 tsp. fresh garlic, minced
  • 2 stalks of celery, diced
  • 1 medium yellow onion, diced
  • 1 tsp. salt
  • 1 tsp. pepper
  • Fresh Parmesan cheese, grated

Using a skillet, heat the oil on medium-high heat. Saute the onion and garlic. Add in the carrots and celery. Add the broth, tomatoes, and garbanzos. Add the pasta and continue to simmer until the noodles are tender. Add in the spices and seasonings. Stir in the Parmesan cheese to your taste.
