  • 1 C. coconut flour
  • ½ C. oat flour
  • 1 C. rolled oats
  • ½ C. peanut butter
  • ½ C. pure maple syrup
  • 1 tsp. vanilla extract
  • 1 tsp. baking powder
  • ½ tsp. sea salt
  • ¼ C. grape jelly

Preheat the oven to 350 degrees. In a bowl, whisk together the flours, oats, salt, and baking powder. In a separate bowl, combine the peanut butter, syrup, and vanilla. Fold the wet ingredients into the dry ones. Roll the dough into 14 small spheres. Using a spoon, place a dip in the dough. Bake the cookies for 10 minutes or until they’re fully done. Place about a teaspoon of jelly in each hollow and let cool.
