  • 1 tsp Olive Oil
  • 1 Small Onion, diced
  • 2 Garlic Cloves, minced
  • 1 pkg Frozen Peas-thawed
  • ¼ cup Milk
  • 6 oz Light Cream Cheese
  • ⅓ cup Grated Parmesan
  • Hot Sauce
  • Salt/pepper
  • ⅓ cup Mozzarella Cheese
  • Baguette

Preheat oven to 425 degrees. In a Dutch oven or large pot, heat oil over medium. Add onion and garlic; cook until lightly browned, 5 to 8 minutes. Add peas to pot and heat over low until warm, 3-5 minutes. Pour pea mixture into a food processor and pulse to lightly puree. In same pot, heat milk on low. Whisk in cream cheese until melted, about 3 minutes. Add pea puree, 1/3 cup Parmesan, a dash of hot sauce, and salt and pepper to taste. Stir well. Put in baking dish and top with mozzarella. Cook until bubbly, about 20 minutes. Serve hot with fresh sliced baguette.
