Make any night a little bit cozier courtesy of this healthy casserole recipe. It's layered with veggies like broccoli, peas and carrots topped off with a crust of lightly caramelized onions at the top.

  • 2 10 oz. pkg. broccoli, chopped
  • 2 eggs
  • 1 onion, chopped
  • 1 pkg peas
  • 1 C. carrots, shredded
  • 1 C. squash, any variety
  • 1 (10 3/4 oz.) can cream of chicken soup, light
  • 1 C. light shredded cheddar cheese
  • Olive oil, for caramelized onions

Layer all ingredients in a large mixing bowl, starting with the soup and adding in vegetables. Beat eggs well and pour on top. If you desire a layer of caramelized onions, add chopped onions coated in olive oil last. Bake at 350 degrees for 30 minutes or until bubbly.
