Watermelon Rind

Pickled watermelon rind is as sweet as any candy you will ever have, and what a great way to NOT waste ANY of the watermelon. I made this for my children when they were young. (They are now 39 and 40)

  • 7 lb. watermelon rind
  • 2 C. water
  • 2 C. vinegar
  • 3 1/2 lb. sugar
  • 1/2 tsp. oil of cinnamon
  • 1/2 tsp. oil of cloves

Cube rind and cover with water. Cook until you can perce it easily with a fork, then drain. Make a syrup of all the other ingredients. Pour syrup over rind and let stand over night. Next morning, pour off syrup and bring it to a boil. Pour over the rind. Repeat this two more times. Put into hot sterile jars.
