Watermelon Rind
Ingredients
- 7 lb. watermelon rind
- 2 C. water
- 2 C. vinegar
- 3 1/2 lb. sugar
- 1/2 tsp. oil of cinnamon
- 1/2 tsp. oil of cloves
Directions
Cube rind and cover with water. Cook until you can perce it easily with a fork, then drain. Make a syrup of all the other ingredients. Pour syrup over rind and let stand over night. Next morning, pour off syrup and bring it to a boil. Pour over the rind. Repeat this two more times. Put into hot sterile jars.
