Watermelon Salad with Mint and Ginger
- 4 Tbs. sugar
- 1/4 tsp. salt
- 2 Tbs. fresh ginger, minced
- 4 Tbs. rice wine vinegar
- 2 Tbs. fresh mint leaves, chopped
- 4 C. cubed watermelon
- 1/8 tsp. coarsely ground black pepper
Place sugar, salt, ginger, and vinegar in microwave-safe measuring cup, and process on high until mixture is bubbly and sugar is dissolved. Pour through a strainer and let cool slightly.
Place watermelon and mint in a serving bowl and drizzle with the ginger syrup. Toss together. Refrigerate for 20 minutes to blend flavors. Sprinkle with pepper, and garnish with a mint sprig.
Serves 4 as a side salad.
