Watermelon Salad with Mint and Ginger

Cold, crisp watermelon and chopped mint in a light syrup of ginger, sugar, and rice wine vinegar. A touch of coarsely ground black pepper on top makes this a gourmet treat!

  • 4 Tbs. sugar
  • 1/4 tsp. salt
  • 2 Tbs. fresh ginger, minced
  • 4 Tbs. rice wine vinegar
  • 2 Tbs. fresh mint leaves, chopped
  • 4 C. cubed watermelon
  • 1/8 tsp. coarsely ground black pepper

Place sugar, salt, ginger, and vinegar in microwave-safe measuring cup, and process on high until mixture is bubbly and sugar is dissolved. Pour through a strainer and let cool slightly.

Place watermelon and mint in a serving bowl and drizzle with the ginger syrup. Toss together. Refrigerate for 20 minutes to blend flavors. Sprinkle with pepper, and garnish with a mint sprig.

Serves 4 as a side salad.
