Watermelon Salsa

This is a very light salsa that we serve a lot during the summer. It goes great with grilled chicken, steak, and pork.

Ingredients

  • 2 C. chopped watermelon
  • 1 diced green onion
  • 1 jalapeño, diced
  • 1/4 C. chopped cilantro
  • Juice of 1/2 lime
  • Salt and pepper to taste

Directions

Chop watermelon (you want small pieces but not mush) and put in non-reactive dish. Remove seeds from jalapeño and dice into small pieces. Add to watermelon. Chop the cilantro put into bowl with other ingredients. Squeeze the juice from 1/2 of lime add to watermelon mixture and toss gently. Salt and pepper to taste and top with green onions. Place in refrigerator until ready. Should be made 1 hour before eating.

Like the salt and pepper, the lime, cilantro and jalapeño can be adjusted to personal taste. If the watermelon is cut too finely it will be too juicy and will need to be drained before eating.
