  • ½ cup sugar
  • ¾ cup water
  • 6 cups watermelon chunks, seeded
  • 2 tbsp. lime juice
  • Mint to garnish

Start this sweet sorbet by combining sugar and water in a large saucepan.
Bring this mixture to a boil over high heat and let the sugar dissolve.
Reduce your heat to low and let simmer for 5-7 minutes.
Cover and refrigerate until chilled, about 45 minutes.
In a food processor or blender, mix watermelon and lime juice, blend until smooth. Whisk in sugar syrup to the watermelon mixture.
Pour everything into a pan and freeze until liquid is frozen.
Garnish with mint and serve in chilled dishes.
