Watermelon Vinaigrette
Ingredients
- 4 C. fresh watermelon, chopped and drained
- 1/4 C. red onion, diced small
- 2 Tbs. honey
- 1/4 C. balsamic vinegar
- 3/4 C. light olive oil
- 2 Tbs. fresh basil chopped
- 1 Tbs. fresh parsley, chopped
- Salt and pepper to taste
Directions
Combine watermelon, red onion, vinegar, olive oil, basil, and parsley in a blender. Pulse on and off about 30 seconds until combined. Add salt and pepper to taste. Serve over mixed salad greens or fresh spinach and strawberries.
