Watermelon Vinaigrette

I love serving this watermelon-based dressing during the summer months. It is so light and delish. It will become one of your favorite summer time dressings!

  • 4 C. fresh watermelon, chopped and drained
  • 1/4 C. red onion, diced small
  • 2 Tbs. honey
  • 1/4 C. balsamic vinegar
  • 3/4 C. light olive oil
  • 2 Tbs. fresh basil chopped
  • 1 Tbs. fresh parsley, chopped
  • Salt and pepper to taste

Combine watermelon, red onion, vinegar, olive oil, basil, and parsley in a blender. Pulse on and off about 30 seconds until combined. Add salt and pepper to taste. Serve over mixed salad greens or fresh spinach and strawberries.
