Watermelon Waldorf Wedges

The inspiration for these tasty treats came from the Waldorf Salad. Small watermelon wedges or cubes are topped with a simple honey, mayonnaise, raisin and walnut mixture. They make a wonderful appetizer, snack or dessert.

  • 16 watermelon wedges with rind, about 1-2inch at rind x 3-inch long x 1/2-inch thick
  • 1 Tbs. plus 1 tsp. honey
  • 1/4 C. mayonnaise
  • 1/4 C. chopped walnuts
  • 1/4 C. raisins

Cut watermelon into wedges and lay on serving platter. In small bowl, mix together the remaining ingredients. Place a little of the nut and raisin mixture on each wedge. Serve.

Note: In place of the wedges, 1-inch cubes of watermelon (without rind) can be used.
