Watermelon Waldorf Wedges
- 16 watermelon wedges with rind, about 1-2inch at rind x 3-inch long x 1/2-inch thick
- 1 Tbs. plus 1 tsp. honey
- 1/4 C. mayonnaise
- 1/4 C. chopped walnuts
- 1/4 C. raisins
Cut watermelon into wedges and lay on serving platter. In small bowl, mix together the remaining ingredients. Place a little of the nut and raisin mixture on each wedge. Serve.
Note: In place of the wedges, 1-inch cubes of watermelon (without rind) can be used.
