Watermelon with Grilled Halloumi Cheese

(1 vote) 5 1

Halloumi cheese is from the Mediterranean island of Cyprus. It is unique because it will grill and brown without melting. Teamed with watermelon, it is a sweet-salty treat that works as an appetizer, side dish or salad. If you can't get Halloumi cheese, there are Spanish frying cheeses or Indian paneer that would be good, or as a last resort, skip the grilling and use chunks of ricotta salata.

Heat a non-stick grill pan over medium-high heat for 2 minutes. Pat Halloumi slices with paper towels to dry them, and brush each slice lightly with olive oil on one side. Place cheese in grill pan, oil-side down, and heat for 1-2 minutes or until golden. Brush top side with oil, flip, and cook 1-2 minutes more. Cut each Halloumi slice in half and layer 4 pieces of cheese with 4 slices of watermelon on a plate. Make a total of 4 plates. Drizzle each portion with 1 tsp. of honey and garnish each plate with 2 sprigs of fresh mint.
