Watermelon with Grilled Halloumi Cheese
- 8 oz. Halloumi cheese, cut into 8 slices
- 1 Tbs. olive oil
- 16 slices watermelon (3-inch squares, about 1/2-inch thick)
- 4 tsp. honey
- 8 sprigs fresh mint
Heat a non-stick grill pan over medium-high heat for 2 minutes. Pat Halloumi slices with paper towels to dry them, and brush each slice lightly with olive oil on one side. Place cheese in grill pan, oil-side down, and heat for 1-2 minutes or until golden. Brush top side with oil, flip, and cook 1-2 minutes more. Cut each Halloumi slice in half and layer 4 pieces of cheese with 4 slices of watermelon on a plate. Make a total of 4 plates. Drizzle each portion with 1 tsp. of honey and garnish each plate with 2 sprigs of fresh mint.
