  • 1 garlic clove, minced
  • 1 onion, chopped
  • 3 Tbs. chopped fresh parsley
  • 1/2 tsp. dried oregano, crumbled
  • 1 1/2 tbsp butter, melted
  • 1 lb. peeled and deveined medium shrimp
  • 4 large potatoes, wedge slices
  • 1 package cherry tomatoes, sliced in half
  • 12 thin slices of soppressata
  • Salt and pepper to taste
  • Parmesan cheese (optional)

Peel potatoes and slice into wedges.  Place on a baking sheet and place in the over at 370 degrees for about 15-20 minutes.  Once potatoes are tender, but not golden brown yet remove from the oven.  In a large mixing bowl combine all ingredients and mix together.  In a casserole dish lay potato wedges down and then put the mixing bowl mixture on top of the potatoes.  Place the casserole dish into the oven and bake for about 10-15 minutes.  Remove from the oven when the potatoes are golden brown and the shrimp is tender.
