Wellington Chicken Casserole

Take your typical recipe for beef Wellington, switch out the meat, and make it a casserole! It's delicious!

Ingredients

  • 2 boneless, skinless chicken breast halves
  • 2 tsp. butter
  • 1 3-oz. package cream cheese
  • 1/2 C. mushrooms, sliced
  • 1 Tbs. green onion, chopped
  • dash salt
  • dash pepper
  • one 4-oz. package crescent rolls

Directions

Preheat oven to 350 degrees.  Heat a skillet over medium heat with butter.  Add chicken and cook each side for about 3 minutes.  Grease a small baking dish and place chicken inside.  Combine cream cheese, mushrooms, salt, pepper, and onions in a bowl, then cover chicken with the mixture.  Unroll crescent rolls to make one big rectangle; seal any seams that there are in the dough.  Place dough over chicken and sauce, pinching edges to seal in the dish.  Bake for about 20 minutes.

Serve with: Baby Broccoli with Garlic
