I made this for my Sunday School class and everyone from teens to adults liked it.

Ingredients

  • 1 32-oz. bag frozen hash brown potatoes
  • 8-10 oz. lean ham, cubed
  • 1 med. onion, chopped
  • 3 C. shredded cheddar cheese
  • 12-14 eggs
  • 1 1/4 C. milk
  • 1 1/2 tsp. salt, to taste
  • 1 tsp. pepper, to taste

Directions

Use a 4-5 quart crock-pot. Layer in the following order: 1/3 each of hash browns, ham, onion and cheese. Repeat layers 2 times. Beat together milk, eggs, salt & pepper. Pour over the layers in the crock-pot Cover and cook on low for 8-9 hours.

  • i THINK IT'S A GREAT RECIPE...ON THE WEEKEND, I HAVE LOTS OF GUYS OVER FOR FOOTBALL, ETC. AND THEY ARE ALWAYS HUNGRY, IF I DON'T FEED THEM, THEY TRASH THE PLACE AND BEAT ME UP. THIS WILL KEEP THEM QUIET FOR AWHILE.

  • I may never have a crowd for breakfast again, but if I do, this sounds wonderful. That is, if, I can remember to put it in the crock pot at midnight. Or maybe for a light supper some weekend night would work better for me.
