  • 1 Pound of Chicken Breast
  • 4 Small Halved and Pitted Peaches
  • 1 Cup of Sliced Red Onions
  • 1 Tablespoon of Balsamic Vinegar (or more to taste)
  • 8 Cups of Mixed Greens
  • 1 Pinch of Salt
  • 1 Pinch of Black Pepper
  • 1 Cup of Croutons

Firstly, put the chicken in a large pot and season it with salt and pepper. Make sure all of the chicken is submerged in water and bring it to a boil, and then reduce the temperature to a simmer for 10-15 minutes. Then, remove the chicken from the water and let it cool until you’re able to touch and shred it.

Combine the remaining ingredients -- the peaches, onions, balsamic vinegar, mixed greens, and croutons -- in a large mixing bowl with the shredded chicken until everything is evenly mixed. Serve and enjoy as a meal or as a side.
