Wheat Berry Salad

Ingredients
- Wheat Berries:
- 3/4 C. uncooked wheat
- 3 C. water
- Creamy Vinaigrette Dressing
- 1/3 C. vegetable oil
- 2 Tbs. mayonnaise or salad dressing
- 1/2 tsp. salt
- 1/4 tsp. garlic powder
- 1/8 tsp. pepper
- Salad
- 1 C. chopped broccoli
- 1 C. chopped cauliflower
- 1 C. grape or cherry tomatoes, cut in half
- 1 sm. green bell pepper, chopped (1/2 C.)
- 3 med. green onions, sliced (1/4 C.)
- 1/2 C. crumbled feta cheese
Directions
In 3-quart saucepan, soak wheat berries in water for 30 minutes. Heat to boiling over high heat. Reduce heat to low; partially cover and simmer 55 to 60 minutes or until wheat berries are tender. Drain; rinse with cold water. In small bowl, mix dressing ingredients until well blended. In large serving bowl, toss wheat berries, salad ingredients and dressing. Cover; refrigerate at least 1 hour before serving.
