Wheat berries are whole grains of wheat and can be found in the health food section of your grocery store.

15 min preparation + 150 min cooking

Ingredients

  • Wheat Berries:
  • 3/4 C. uncooked wheat
  • 3 C. water
  • Creamy Vinaigrette Dressing
  • 1/3 C. vegetable oil
  • 2 Tbs. mayonnaise or salad dressing
  • 1/2 tsp. salt
  • 1/4 tsp. garlic powder
  • 1/8 tsp. pepper
  • Salad
  • 1 C. chopped broccoli
  • 1 C. chopped cauliflower
  • 1 C. grape or cherry tomatoes, cut in half
  • 1 sm. green bell pepper, chopped (1/2 C.)
  • 3 med. green onions, sliced (1/4 C.)
  • 1/2 C. crumbled feta cheese

Directions

In 3-quart saucepan, soak wheat berries in water for 30 minutes. Heat to boiling over high heat. Reduce heat to low; partially cover and simmer 55 to 60 minutes or until wheat berries are tender. Drain; rinse with cold water. In small bowl, mix dressing ingredients until well blended. In large serving bowl, toss wheat berries, salad ingredients and dressing. Cover; refrigerate at least 1 hour before serving.
