Whiskey-Glazed Carrots With Tarragon

- 1 stick butter, Divided
- 2 bunches carrots, peeled
- 1/2 C whiskey
- 3/4 cups (to 1 Cup) Brown Sugar
- 2 Tbs. French tarragon, chopped
- Salt, to taste
- Pepper, to taste
Melt 1 tablespoon butter in a skillet over high heat. Add carrots and cook for 60-90 seconds. Remove from skillet.
Pour in whiskey and heat for 30 seconds on high heat. Reduce to medium heat and add remaining butter. Sprinkle brown sugar on top and then add carrots back. Cover and cook for 5 minutes. Season with salt and pepper. Continue cooking until carrots are glazed, an additional 5 minutes.
Top with French tarragon and serve warm.
