  • 2 lb. russet potatoes, peeled and cubed
  • 1 onion, diced
  • 3 T. flour
  • Enough water to cover potatoes
  • Salt and pepper to taste
  • 1 stick butter
  • 1 (12 oz.) can evaporated milk
  • 1 C. mozzarella cheese

In a large bowl, toss potatoes and onion with flour, salt, and pepper; set aside for 15 minutes. In a large pot, melt butter, add in potato mixture, stir well, and add a bit of water to just cover the potatoes. Bring to a boil, stir in milk, reduce heat, and simmer for 30 minutes until potatoes are tender. Season with additional salt and pepper and stir in cheese until melted.
