Ingredients

  • 1 1/2 C. dried white beans
  • 2 tsp. olive oil
  • 2 C. onions, chopped
  • 3 garlics, minced
  • 1/2 tsp. rosemary
  • 1/4 tsp. thyme
  • 3 C. vegetable broth
  • 3 C. water
  • 1 small head cabbage, coarsely chopped
  • 3 carrots, sliced
  • 1 tsp. salt
  • 1/2 tsp. pepper

Directions

Heat oil in heavy pot. Cook onions and garlic for about 6 to 7 minutes. Add rosemary and thyme. Stir. Add broth and water. Bring to boil and let it simmer for 7 to 8 minutes or until beans are tender. Add remaining ingredients. Bring to boil and cook for 15 to 20 minutes or until vegetables are very tender.
