White Bean and Rice Soup

Ingredients
- 2 C. cannellini beans
- 2 tsp. salt
- 2 tsp. pepper
- 2 tsp. onion powder
- 2 tsp. garlic powder
- 2 tsp. celery seed
- 4 stalks celery
- 2 tsp. cilantro
- 4 bay leaves
- 2 C. cooked rice - or sm. pasta of your choice
- 1/2 pkg. baby carrots
- 1 sm. canned ham
- 2 lg. onions
- 4-5 cloves minced garlic
- 3 C. chicken stock
- 8 C. water (use judgment)
Directions
Soak beans in water at least 1 hour or overnight. Prepare chicken stock in a pot, add water, then bring to a boil. Dice vegetables and ham. Add all ingredients (including spices) to chicken stock and bring back to a boil, then reduce heat, and let simmer for 4 hours.
