White Bean, Spinach and Red Pepper Soup

You can make this delightful soup vegetarian by substituting vegetable broth for the chicken broth.

Ingredients

  • cooking spray
  • 1/2 C. frozen chopped onion
  • 1/2 C. chopped red bell pepper
  • 1 C. frozen chopped spinach
  • one 15-oz. can white cannellini beans
  • one 14.5-oz. can fat-free reduced-sodium chicken broth
  • 1/2 tsp. crushed dried thyme
  • 1/2 tsp. crushed dried majoram

Directions

Coat large nonstick saucepan with cooking spray. Add frozen chopped onion and red bell pepper. Saute, stirring often, for 10 minutes. Add spinach, white beans, chicken broth and the dried spices. Simmer for another 2 minutes. Divide between 3 covered freezer containers. Chill 1 for the next day and freeze the rest.
