- 3 1/2 C. hot water
- 1/2 C. sugar
- 1 Tbs. rendered chicken fat or soft shortening
- 1 Tbs. salt
- 2 packages dry yeast
- 8 C. flour
Combine hot water with sugar, chicken fat or shortening, and salt. Cool to lukewarm and stir in yeast. Let stand until foamy, then add 4 C. flour. Keep adding flour until mixture can be kneaded by hand and is not sticky but nice and smooth.
Knead well and put in greased bowl covered with damp towel and set in warm place to rise until doubled in bulk. Punch down and shape into loaf (or rolls). Place in greased 9x5” loaf pan and let rise again until light. Bake at 400 degrees for about 20-25 minutes, or until done (loaf should sound hollow when tapped on bottom.
