  • 1 Tbsp. olive oil
  • 2 Tbsp. butter
  • 3 Tbsp. flour
  • 1 1/2 C. milk
  • 3 C. shredded white cheddar cheese
  • 1/2 tsp. nutmeg
  • 1/4 tsp. cayenne pepper
  • 1/2 tsp. salt
  • 1 lb. elbow macaroni, cooked

Heat a skillet over medium. Add the oil and butter and whisk in the flour for about 3 minutes. Add the milk slowly while stirring. Once the milk has thickened, add 2 cups of cheddar. Season with nutmeg, cayenne, and salt. Add the cooked pasta to the sauce and coat completely. Place in a baking dish and top with the rest of the cheese. Cook in the broiler until the cheddar cheese is slightly browned.
