White Chili
Ingredients
- 2 Tbs. vegetable oil
- 1 white onion
- 1 3-5 lb. fryer chicken, cut in pieces
- 2 tsp. ground oregano
- Cavender's seasoning
- 2 tsp. ground coriander
- 1 tsp. garlic powder
- 2 tsp. ground cumin
- Tabasco to taste
- 1 tsp. salt
- 20 oz. chicken broth
- 1 4 oz. can chopped green chilies
- 3 15.8 oz. cans Great Northern Beans
- Salt to taste
Directions
Sauté onion in vegetable oil. Add chicken pieces and cover with water. Add seasonings. Cook chicken until done. Remove chicken from broth, cool and cube. Reserve enough broth to equal 20 oz. Stir cubed chicken into the broth. Stir in remaining ingredients until well blended. Bring to a boil. Reduce heat to low. Simmer for 15 to 30 minutes. Even better the next day. Yield: "a bunch."
