White Choco-Tofu Pie

Don't let the tofu scare you away. This is an effortless pie for any occasion.

  • 2 C. white chocolate chips
  • 1/3 C. coffee or orange liqueur
  • 1 block silken tofu
  • 1 tsp. vanilla or almond or orange extract
  • 1 Tbs. honey
  • 1 chocolate wafer or graham cracker crust
  • Whipped cream (optional)
  • Shaved white chocolate (optional)

Place a small metal bowl over a saucepan with simmering water. Melt the chips and liqueur in the bowl. Stir in extract. Combine the tofu, chip mixture, and honey in the blender jar. Blend until smooth. Pour the filling into the crust and refrigerate for 4 hours, or until the filling is set. Serve with optional whipped cream or chocolate shavings.
