Make peanut butter sandwiches using 2 crackers with creamy peanut butter in between until all crackers have been used. When sandwiches are finished, place both packages of white chocolate morsels in a microwave safe bowl. Microwave on high for 45 seconds and stir well. Keep heating in 15 second increments until all chips are melted being careful not to over heat (just warm enough to melt). Dip cracker sandwiches in the melted white chocolate and place on parchment paper lined cookie sheets. Top with Christmas sprinkles and cool for an hour.
