You have to have cranberries on Christmas, so why not make an awesome dessert with them. This white chocolate cranberry cheesecake has the right amount of tang and sweetness to it.

  • 1 store bought piecrust
  • 1 ½ tsp. cornstarch
  • 1/3 C. cold water
  • 1 ½ C. fresh cranberries
  • 1 ½ package of cream cheese, softened
  • 1 egg
  • 1 tsp. vanilla extract
  • 1 ½ tsp. lemon juice
  • 1 C. white chocolate chips
  • ¼ C. heavy whipping cream

Preheat the oven to 325 degrees. In a saucepan, mix together the cornstarch, cold water, and cranberries. Cool over a medium heat or until it reaches a boil. Set it aside once it is thickened. In a mixing bowl, beat together the cream cheese until it is fluffy. Add in the egg, vanilla, and lemon juice. Melt the white chocolate and cream in a double boiler. Add this mixture to the cream cheese mixture. Pour in the cheesecake mixture into the store bought piecrust and layer the cranberry sauce on top. Let it bake for 30 minutes.
