White Chocolate Meringue Cookies

- 8 egg whites
- 4 1/2 cups confectioner’s sugar
- 2 C. white chocolate shavings
Preheat the oven to 190 degrees. Grease a baking sheet with butter and dust with a thin layer of flour.
In medium bowl, use an electric mixer on medium speed to whip the egg whites until foamy. Slowly add sugar as you continue beating the eggs. When the mixture forms stiff peaks, spoon into a pastry bag. Pipe the meringues onto the baking sheet using a round tip. Sprinkle each meringue with a pinch of white chocolate.
Place the baking sheets in the oven. Using a wooden spoon, prop open the oven door slightly so that it does not fully close. Bake for 3 1/2 hours, or until the meringues are dry. Remove cookies from pan and allow to completely cool on a wire rack.
