Ingredients

  • 8 oz. white chocolate, broken into small pieces
  • 1/4 C. butter
  • 1/2 C. confectioners sugar
  • 1 tsp. vanilla extract
  • 1 egg yolk
  • 1 C. coconut shavings

Directions

On the top of double boiler, pour chocolate and butter over low heat. Stir constantly until smooth. Remove from heat. Add sugar, vanilla extract and egg yolk. Beat with an electric mixer until smooth. Pour mixture into baking pan covered with wax paper. Cover and refrigerate for 1 hour. Shape mixture into balls. Roll balls with coconut shavings. Refrigerate for at least 8 hours.
